Guts & Glory

In Spanish we say “Cursi”… Lets say romantic in English… For me kitchen is all about romanticism, involve a lot of feelings, all our senses. I believe that we have in our DNA flavours, aromas, textures… Mean while we grow up, we feet it… We make rich.

There is a big mango tree in my grandmother backyard in Venezuela, we have mango all the year, but mango season is crazy, you can walk for a carpet of really yellow ones, is a fest. Curiously when I was a child I don’t like too much, but there you can smell the aroma everywhere. What about Coconut? I’m from the Caribbean, we have coconut in our blood… I remember this ice cream at the beach that you buy it in the shell; was long time ago, you cannot find it anymore, is a shame. But we still have “Conservas”, “Coquitos” or just simple coconut water.

In 2011, I was I London working in Smiths of Smithfield, and I remember that day when I tried for first time Thai Basilicum, was love at the first time…People say that White Chocolate is no real, I am disappointed… For me a piece of a good one is glory, and i came from a Cacao land, actually the father of my grandmother used to have cacao trees.  And to finish i just let you know, I am a cookie lover!

Why I’m telling you all this histories… Well can you imagine what happened the first time that I tried the dessert of my new work Guts & Glory…

Coconut Crumble, Coconut and White Chocolate Cream, Mango Gel, Thai Basilicum Ice Cream and Mango Merenge… Too Much? No way… is perfect!
